Gluten-Free Pesto Pene Pasta | Nature’s Oasis on Durango Cooks

IDTV returns to Nature’s Oasis to kick off the fifth season of Durango Cooks with head chef Charles Childers. On the menu for this episode is a gluten-free penne pesto pasta dish, made with fresh and healthy ingredients from Nature’s Oasis Natural Market. Charles doesn’t hold back when it comes to the garnish, using the finest goat cheese, boar’s head bacon, organic grape tomatoes and pine nuts toasted to perfection. Learn how to make this delicious crowd pleaser, and find the recipe below:

Gluten-Free Pesto Pasta (Serves Four)

¼ pound fresh basil leaves, cleaned and dried
4 Tbsp. toasted pine nuts
2 Tbsp. Parmagiano Regianno cheese(or any dry white cheese)
1 Tbsp. chopped garlic
olive oil
Sea salt to taste
Tinkyada Brand brown rice pasta

In a four quart pot, add 3 quarts water, ½ cup sea salt, and 2 Tbsp. olive oil. Bring to a rapid boil. Add pasta, wait 15-20 secs., and stir, breaking up any pasta that sticks together. Boil for approx. 15 mins., drain, and rinse if desired. Add basil, 4 Tbsp. pine nuts, garlic and sea salt to food processor. Run food processor on low, and slowly add about 1/2 cup olive oil until the contents combine. Turn off food processor, scrape the sides down into the bowl, and add a little more olive oil to achieve the consistency you like. In a hot sauté pan, add pesto and cook just until oil starts to separate, and cheese is starting to melt. Add cooked, cooled pasta and sauté until pasta is hot. Plate pasta and add any garnishes you like. This dish goes great with shrimp, chicken, fish, pork, or lamb. Enjoy!

Matthias Giraud (a.k.a Super-Frenchie) is a pro BASE jumper and skier originally from France. This daring Frenchman returns to the Southwest, the region he first called home after emigrating from France. His first stop is Moab, where he jumps Tombstone cliff, and other impressive Moab landmarks. Next he’s off to the mountain town of Durango, his first home in the U.S. The March snow won’t dissuade Giraud as he endeavors to jump a 1,500ft cliff known as Castle Rock, and this time he’s brought his skis to the top of the cliff for a Ski BASE jump.
